Creating sugar flowers is an art that requires patience and precision, but the results are truly worth the effort. In this chapter, we will guide you through the process of creating a beautiful sugar daisy. This delicate flower will add a touch of elegance to any cake, making it perfect for birthdays, weddings, or any special occasion.
Begin by creating the center of the daisy. Take a small piece of yellow gum paste and press it into a daisy center mold. Insert a wire into the center, and allow it to dry.
Now, let's move on to the petals. Roll out your gum paste thinly and press it into a daisy petal mould. Make sure to press firmly to capture all the details. Remove the excess paste and release the petals from the mould. Repeat the process to create enough petals for your daisy. Remember, a real daisy has multiple layers of petals.
Attach the petals to the center using edible glue. Start with a single layer, and then add more layers, offsetting the petals as you go.
For the calyx, roll out some green gum paste and press it into a calyx mold. Attach this to the back of the daisy, again using edible glue. To make the leaves, press green gum paste into the sunflower and daisy leaf mould..
Once dry, add colour or shimmer to the daisy using edible dusts. Use a soft brush for this process, and apply the color gently to avoid damaging the flower. Steam to fix the dusts to the daisy.
