Make Sunflower & Daisy Leaves
In the art of cake decoration, creating realistic edible flowers is a skill that can truly set your creations apart. This video tutorial will walk you through the process of crafting leaves for sunflowers and daisies using a Flower Pro Leaf Mould. These leaves can add a touch of authenticity to your floral cake designs, making them look more lifelike and appealing.
Begin by preparing the flower paste. Roll it into a sausage shape that is three-fourths the length of the mould. This paste will be used to create the leaf. To ensure the paste releases easily from the mould, apply a minimal amount of vegetable fat shortening or dust the mould liberally with cornflour or cornstarch.
Place the paste onto the mould and work it towards the edges. This ensures that the paste reaches right to the edge of the mould, creating a realistic leaf shape. For convenience, turn the mould around and continue to work the paste towards the edges. This creates a thicker area in the middle, emulating the thickness where the wire will go in.
Next, press the paste onto the top of the mould, creating a slight ridge. This ridge will hold the wire that forms the stem of the leaf. Dip a 22-gauge wire into some egg white and insert it into the ridge created in the paste. The wire should go in about halfway. Press the paste around the wire to secure it.
Now, work on the back of the leaf by pressing the back veiner into the paste. This process needs to be done fairly firmly to achieve beautiful veining. Gently remove the leaf from the mould. Use a pad and a small stick to soften the edges of the leaf. This process should be done on the edge of the pad to maintain the veining on the back.
Repeat this process with different sizes of paste balls and wire gauges to create leaves of different sizes.
Once the leaves are dry, they are ready to be coloured. Begin by applying a base colour of apple green all over the leaf. This gives the leaf a natural green colour. Accentuate the central vein of the leaf by brushing a darker foliage green down the middle of the leaf. This process should be done on both the front and back of the leaf.
