Make A Calla Lily For Cakes
This video tutorial provides a step-by-step process to create a stunning sugar Calla Lily, a flower known for its elegance and simplicity. The instructions cover the entire process, from forming the stem and flower centre, to shaping the petal and adding the final touches of colour.
Start by creating the stem for the Calla Lily. This is achieved by using multiple wires (depending on the size and eventual weight of your flower) wrapped together with floral tape. The wires should be cut to the desired length and then the floral tape is then wrapped around to secure them together and to provide a realistic stem texture.
The next step is to create the flower centre. Begin by rolling a piece of sugar paste into a sausage shape. Insert the stem into the flower centre. The paste is then textured using a texture mat to give it a realistic appearance. Once the texture is applied, the centre needs to be coated in large sugar crystals to mimic the look of a real Calla Lily. To do this, apply a thin layer of piping gel to the centre and then roll it in the sugar crystals.
After the centre is complete, it's time to shape the petal. Using a template, cut out the petal shape from the sugar paste. Then, using a silicone mould, press the sugar paste firmly into the mould to capture all the intricate details.
The petal is then rolled around the flower centre, ensuring it is secure and positioned correctly. The flower should then be left to dry. It is recommended to hang the flower upside down during this process to maintain its shape. The drying process can take up to 24 hours, depending on the humidity and temperature of the environment.
After the flower has dried, it's time to add colour. For a white Calla Lily, a pearlescent dust can be used to give the flower a natural lustre. This should be brushed all over the surface of the flower, including the inside.
For a green Calla Lily, a pale green dust can be used. This should be brushed from the base of the flower upwards, allowing the colour to naturally dissipate as it reaches the top. A darker green dust can then be applied at the very base of the flower for added depth.
For a purple Calla Lily, a combination of two different purple dusts can be used. A darker purple should be applied as a base and a brighter purple can then be applied to the edges of the flower, creating a beautiful gradient effect.
Once the colour has been applied, the flower should be gently steamed. This process sets the colour and gives the flower a natural shine.
The finished Calla Lily can be used as a stunning addition to any cake or sugar flower arrangement. With practice, different colours and sizes can be created, allowing for endless possibilities.
