Create the cinnamon stick by rolling out a sausage shape from your chosen paste. This should be approximately 12cm in length. Press this into one half of the cinnamon stick mould, ensuring it is filled evenly. Flex the mould to release the cinnamon stick and leave it to dry for a few hours. For a double cinnamon stick, simply repeat the process but fill the entire mould cavity.
Use a mixture of brown gel colour and vodka to paint the cinnamon sticks. Apply this mixture to the sticks using a paintbrush, ensuring all areas are covered. Once the paint has dried, a layer of edible lacquer can be applied to give the sticks a shiny finish.
The citrus slice mould can be used to create a variety of citrus fruits, including oranges, lemons, limes, grapefruits, and blood oranges. Begin by pressing a small amount of paste into the mould, ensuring it is filled evenly. Flex the mould to release the citrus slice and leave it to dry before adding colour.
To paint the citrus slices, use a mixture of gel colours and vodka. The colour mixture will depend on the type of fruit being created. For example, for an orange slice, use a mixture of orange and yellow gel colours. Apply the paint to the slice using a paintbrush, ensuring all areas are covered. Once the paint has dried, a layer of edible lacquer can be applied to give the slices a shiny finish.
The star anise mould is a detailed mould that creates a realistic star anise decoration. Begin by pressing a small amount of paste into the mould, ensuring it is filled evenly. Once the mould is filled, remove any excess paste with a rolling pin. Flex the mould to release the star anise and leave it to dry before painting.
