This video focuses on creating winter foliage for cakes using the Flower Pro mould. The tutorial will guide you through the process of crafting cedar and bay laurel to form realistic and beautiful winter foliage for cake decoration.

To make cedar leaves, dip the end of a 28 gauge wire into egg white and insert into a ball of paste. With a littl cornflour on your fingers, roll the paste to the same length as the leaf cavity. Brush the mould with a little vegetable fat and press the paste into the mould. If desired, vein the back of the leaf using the Flower Pro Fern Back Veiner. Flex the mould to remove then leave to dry.

For the berries, take three 28 gauge green wires and wrap with quarter width brown floral tape. Open out the three 5mm wires at the top and ensure they fit in the triple berry mould cavity. Roll paste into a short sausage and press into the triple berry cavity. Press the wires into the paste. Gently squeeze the mould around the paste to secure the wires. Flex the mould to release and allow to dry.

When making bay laurel leaves, roll paste into a sausage shape with a slight point at one end and about three-quarters the length of the bay leaf mould. Push into the mould, pressing to make thinner at the edges and slightly deeper down the centre. Make a ridge down the centre of the paste. Take a 26 gauge wire and insert half way into the leaf. Flex the mould to release the leaf and allow to dry. 

For single berries take a 28 gauge wire and wrap quarter width green floral tape around the end three times. Bend the end into a hook, then wrap the tape around the hook three more times, to make a floral tape bud. Press paste into the large single berry mould. Brush the floral tape bud with egg white and insert into the paste. Flex the mould and release the berry. Leave to dry.

Once all the elements are dry, they can be coloured with food safe dusts and assembled to create the winter foliage. With the help of this video tutorial you'll soon be creating beautiful. Enjoy the process and have fun with it!
