This video focuses on creating winter foliage for cakes using the Flower Pro mould. The tutorial will guide you through the process of crafting juniper and yew to form realistic and beautiful winter foliage for cake decoration.

To make juniper berries, press paste into the juniper berry mould. Insert a floral tape bud, press the mould around the paste and remove. Using scissors, snip into the three lines on the top of the berry. Once dry, dust the berries with white titanium dioxide powder from the tip to about half way down. For the leaves cut use 30 gauge green wires. Dip the end of a wire into egg white and insert through a small ball of paste, stretching the top slightly past the end of the wire. Press into the mould, turn over and press the opposite side. Remove from mould and dry. Make 12 small juniper leaves and 12 larger juniper leaves.

When making yew berries, press paste into the large yew berry section of the mould. Press the Companion Tool into the centre then remove from the mould. Press the ball end of the Companion Tool into the top of the berry, place onto a mini pad and use the Tool to roll the berry into a bowl shape. Apply egg white or piping gel to the base of a floral tape bud and pull the wire through the berry so the bud sits inside. 

For the yew leaves, brush egg white along 45mm of a half length 24 gauge wire and insert into paste . Press into the yew leaf mould with a cosmetic sponge, then use a Dresden tool to work the paste into the edges. Flex the mould and remove. Add extra detail by snipping some of the edges with scissors. Dry on a convoluted foam former.

Once all the elements are dry, they can be coloured with food safe dusts and assembled. With the help of this video tutorial you'll soon be creating beautiful winter foliage. Enjoy the process and have fun with it!
