In this video we explore the process of creating realistic sugar antlers, an exquisite addition to any cake design. These intricate decorations can elevate the aesthetic of a cake, making it a centrepiece at any event. The process involves moulding, drying, and colouring techniques to achieve a lifelike appearance.
To begin, press paste into the mould, ensuring that it fills all the intricate details. A cosmetic sponge can be used to evenly press the paste into the mould. Remove from the mould. Use the same process to create the base of the antler. Once released from the mould, join these two sections together to complete the antler. Repeat with the antler on the opposite side of the mould that curves in the other direction so you have a pair.
These can be attached to the side of a cake whilst still wet and pliable or, depending on how you would like to be present them, can be allowed to dry flat at this stage.
For a three-dimensional antler, an 18 gauge wire can be used for support. The wire should follow the curve of the mould and be embedded into the paste. Release from the mould and fill up the opposite side of the antler with paste. Use edible glue or softened paste to attach the wired antler to the antler still in the mould. Relase from the mould for a 3D antler.
Once the antler is fully assembled, it can be left to dry on a piece of foam or in a food dehydrator. After drying, the antler is ready for the next step, which involves colouring and finishing touches.
After the antlers have thoroughly dried, they are ready to be coloured. To achieve a natural, realistic look, a combination of edible dust colours can be used. A mix of brown, cream, and a touch of black is recommended. After the dusting is complete, steam can be applied to the antler. This will set the colours and give the antler a slight sheen, making it look more like a real antler.
For the final touch, a bit of edible glaze can be applied to the antler. This will give it a glossy finish, making it look even more realistic. Apply the glaze sparingly with a soft brush, and allow it to dry completely before handling the antler.
And there you have it: a realistic sugar antler, ready to adorn any cake.
