Instructions

Step 1 – Using the Rococo Silicone Moulds
Prepare the Rococo moulds with a light coating of Trex, white vegetable fat or cornflour to help release the fondant cleanly.  Press fondant firmly into the mould cavities, using fingers and a Dresden tool to work it into the finer details and outer edges. Trim away any excess fondant with a palette knife so the surface sits level with the mould. Gently flex the silicone to loosen the decoration before turning the mould over and carefully releasing the fondant. Repeat this process to create all of the crest, corner and flourish decorations needed for the cake, allowing them to dry slightly before handling for easier placement.

Tips for Using Silicone Moulds

  • Renshaw Extra Fondant is recommended for mould work as it releases cleanly and captures intricate detail beautifully.
  • Trex, Crisco or cornflour can all be used to help prevent sticking, depending on personal preference and the design of the mould.
  • Allowing decorations to dry slightly before handling or attaching them to the cake makes them much easier to position without distortion.
  • Using only small amounts of edible glue helps avoid excess glue squeezing out around the edges of the decorations.

Step 2 – Attaching the Decorations to the Cake
Apply a small amount of edible glue to the back of each decoration and position them evenly around the side of the cake. Use only a gentle touch when pressing them into place to avoid damaging the detail. Attach the matching corner pieces beside each other to create the ornate Rococo pattern around the cake. The crest decorations can then be added between the corner pieces to complete the upper section of the design.

The lower section of the cake is decorated using the bottom two flourish designs from the Rococo Flourishes Mould. Apply edible glue to the back of each flourish and arrange them around the bottom edge of the cake. Line up the points of each flourish with the crest decorations above to create a balanced and symmetrical design. Continue adding the flourishes around the entire cake until the pattern is complete.

Step 3 – Painting the Decorations Gold
To achieve the luxurious antique gold finish, mix gold lustre dust with rejuvenator spirit to create edible paint. The high alcohol content helps the paint dry quickly and evenly. Using a larger paintbrush, apply the gold paint across the raised fondant decorations. A finer brush can then be used to reach the detailed edges and smaller areas. If any paint accidentally transfers onto the cake, dampen a cotton bud with rejuvenator spirit and gently wipe the area clean. Although painting all the details takes time, the finished effect gives the cake its striking Rococo appearance.

By combining detailed silicone moulds with simple fondant techniques, it is easy to recreate this regal look at home.
