A versatile decorative element that can be used in a variety of settings, from cupcakes to Yule logs, cakes, and showpieces. This guide will walk you through the process of using a specially designed pine cone mould, which can produce three different sizes of pine cones.
Start by preparing the sugar paste or rolled fondant. This can be conditioned by working a little vegetable shortening into the paste. Roll the conditioned paste into a smooth sausage shape and press it into the mould. Ensure that the paste fills the mould up to the top. Remove the half pine cone and allow to dry,
Once the first half is dry, repeat the process for the second half. Brush some egg white, edible glue, piping gel or super bond onto the first half. This will make the surface sticky and ready to bond with the second half. Position the dry half of the pine cone onto the half still in the mould, pressing gently at first and then more firmly. This will ensure that the two halves integrate into each other, with the soft half filling in any unevenness on the dry part. Flex the mould to release the pine cone. The result should be a pine cone with a lovely join. If there is a seam, blend the still wet paste of the half just moulded into any gaps. Then allow the pine cone to dry.
Apply some grey dust with a flat brush, again brushing from the top down. This gives a nice contrast to the dark brown underneath. Once the pine cone is completed, it can be used in different applications, such as on a wreath or as part of a larger arrangement.
For a more realistic look, pine needles can be created using green and brown floral tape and a 26 gauge wire. The tape is twisted and wrapped around two or three fingers, then secured with the wire. The twisted tape is then cut to the desired length and opened out to resemble pine needles. To give the pine needles an icy look, brush on a little confectioner's glaze and sprinkle with sugar.
